I was looking for something hearty for the winter and came across a recipe for Alkaline Vegan Chili on Ty’s Conscious Kitchen. It was delicious I had to share it with you.  This was filling, fast, and easy to make. This also froze very well. Give it a try and let me know what you think.

Ingredients

  • 2 red bell peppers
  • 1 habanero pepper
  • 4 tsp grape seed oil
  • 3 cups chopped zucchini
  • 10 oz box of mushrooms
  • 1.5 cups chopped onion
  • 1 tbsp sweet basil
  • 1 tsp cayenne
  • 1 tbsp onion powder
  • 1/2 cup spring water
  • 1/3 cup uncooked quinoa rinsed
  • 1/4 tsp sea salt
  • 6 plum diced tomatoes
  • 1 can cooked garbanzo beans
  • 2 cups of walnut meat

Instructions

  • Place all ingredients in a pot and cook. Its that simple.
