I was looking for something hearty for the winter and came across a recipe for Alkaline Vegan Chili on Ty’s Conscious Kitchen. It was delicious I had to share it with you. This was filling, fast, and easy to make. This also froze very well. Give it a try and let me know what you think.
Ingredients
- 2 red bell peppers
- 1 habanero pepper
- 4 tsp grape seed oil
- 3 cups chopped zucchini
- 10 oz box of mushrooms
- 1.5 cups chopped onion
- 1 tbsp sweet basil
- 1 tsp cayenne
- 1 tbsp onion powder
- 1/2 cup spring water
- 1/3 cup uncooked quinoa rinsed
- 1/4 tsp sea salt
- 6 plum diced tomatoes
- 1 can cooked garbanzo beans
- 2 cups of walnut meat
Instructions
- Place all ingredients in a pot and cook. Its that simple.
