• 1 medium zucchini, chopped
  • 2 medium carrots, peeled and chopped
  • 1/2 small onion, chopped
  • 2 garlic cloves, minced
  • 1 Tbsp fresh herbs of choice or 1 tsp dried
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 5 large eggs
  • 3 stripes uncured turkey bacon, cooked crisp and chopped (optional)
  • 2 Tbsp, almond flour or oat flour
  • Coconut oil, butter or ghee for frying

Instructions

  1. In food processor or blender, pulse zucchini, carrots, onion and garlic making sure not to over process or blend. Squeeze out liquid or blot with paper towel. You should end up with about 1 1/2 cups of vegetable mixture. If you end up with more, freeze for future use or save as an easy addition to scrambled eggs, egg bakes, a stir fry, soups or sauces.
  2. Place vegetable mixture in a bowl and add herbs, salt and pepper. Whisk in the eggs, bacon and flour and mix together to create batter.
  3. Heat oil or ghee on griddle set at 350 F or in a skillet over medium-high heat.
  4. Once oil is hot, drop 2-3 Tbsp of batter onto the griddle or pan. Cook fritters for about 5-6 minutes and flip carefully. Cook for an additional 3-5 minutes or until cooked through.
